These cakes smell so Christmassy! Sponge cakes with cinnamon and a pinch of nutmeg and ginger and made with demerara sugar to give the rich colour.
We usually have the odd pheasant popping into the garden, there is always a robin and what seems like thousands of sparrows and at night we hear foxes, although I have never seen them.
This week we had a new visitor; a Barn Owl! He had an exciting stand off with the resident pheasants and although they won the fence it hasn’t stopped him returning and he has been back several times hunting in the field.
No one in our family likes raisins or sultanas or currents, so a traditional Christmas Cake is out! I have been experimenting with alternatives and this one was really good. I made a sponge mix and added a pinch of nutmeg and a teaspoon of cinnamon. I topped the cake with pre-soaked cranberries and sugar.
