Well roasted veg with loads of flavour served with cod baked with mixed herbs. I roasted red and yellow peppers, courgettes, leeks and tomatoes.
Love scrambled eggs, really adore them. I could eat them for breakfast, brunch, lunch or supper!

Lazy lunch today, mushroom and asparagus with cubed pancetta (cured pork belly) and tomatoes. Lots of ground black pepper too.
I added spring onions, thinly sliced broccoli and sweetcorn to my miso soup.

The crocus’ always look so delicate and fragile but they survive extreme frosts without a mark. They are a lot stronger than they look! They are one of my favourite signs that Spring is on its way.
These thicker Scotch Pancakes have raisins in and are served with a handful of blueberries, sugar and lemon. They would also be really nice with honey.
I rolled this shortbread into a cylinder, chilled in the fridge, then sliced it into thick round biscuits. Lovely with a strong hot coffee in my dainty Portmeirion cup and saucer.
Nice and easy lunch today, roughly mashed avocado on rye bread.
